Queso Blanco Dip

Here is one easy and delicious appetizer that is perfect for a Saturday afternoon full of football! Queso Blanco is one of my favorite appetizers to get at Mexican restaurants.

Don Pablos used to be my favorite Mexican restaurant to order Queso Blanco, but since there is not a single Don Pablos in the state of  Illinois, I had to recreate it in my own kitchen.

This recipe is so quick and easy you can have it on your table in less than 10 minutes! You can adjust the heat to your liking by adding more jalapenos and Tabasco sauce.

Ingredients:

1 lb white American cheese (I used Boar’s Head White American)

2 (4 ounce) cans diced green chilies, undrained

½ to 1 cup heavy cream, depending on thickness of dip you like

1 teaspoon cayenne pepper, or to taste

1/2 jalapeno, seeded and minced

3 tablespoons salsa

Tabasco sauce to taste

How to make Queso Blanco Dip:

Step 1. Combine cheese, green chilies, heavy cream, cayenne pepper, jalapeno, salsa, and Tabasco sauce in a medium saucepan over low heat.

Step 2. Stir until smooth.

Step 3. Adjust the seasonings to taste. Serve with tortilla chips.

Pasta e Fagioli Soup

It’s soup weather! Make this WARM POT PASTA E FAGIOLI for dinner!

The added ground beef makes for a very satisfying dinner I was scrolling and in fact had passed this, when I realized I had to go back up and look at what I’d missed. This is the stuff dreams are made of.

I make this all the time but I use ground sausage instead of beef. I also grate my carrots instead of using chunks. I use whatever seasoning I have on hand. It is so good!

So, now enough talking below steps how to make this good soup!

Prep Time: 20 minutes | Cook Time: 25-30 minutes | Servings: 8

Ingredients:

1 ½ lb. Ground beef

1 medium onion chopped

1 C. Chopped carrots

1 C. Finely chopped celery

4 C. Chicken broth

3 C. Tomato sauce

1 C. Dry small pasta cooked to your liking (any small pasta will do)

1 Can Diced tomatoes undrained

2 tsp. Basil

1 tsp. Oregano

½ tsp. Thyme

2 tsp. Granulated sugar

1 Can Kidney beans drained and rinsed

1 Can Northern beans drained and rinsed

3 tsp. Minced garlic

Parmesan cheese and chopped parsley for garnish if desired

Salt and pepper to taste

How to make Pasta e Fagioli Soup:

Step 1. Place the ground beef into a large deep sized pot over medium-high heat and begin to brown.

Step 2. Mix in the onion, carrots, and celery, and cook until the meat is browned completely and the vegetables are beginning to soften. Drain any excess grease.

Step 3. Mix in salt and pepper to taste as well as the basil, oregano and thyme and minced garlic. Saute another 30 seconds.

Step 4. Reduce heat to simmer, and pour in the chicken broth, tomato sauce, diced tomatoes, and sugar. Stir to combine, cover and cook for 20 minutes.

Step 5. Add the beans and cooked pasta to the pot, stir to combine, cook for 5 minutes longer and serve. Garnish with fresh chopped parsley and parmesan cheese if desired.

Super Easy Cabbage Soup

Tasty soup. I added cauliflower, green beans & tbs tomato paste. Use fire roasted diced tomatoes instead of stewed. Adjusted seasonings a little. Will make again.

It is the best cabbage soup recipe you can find.

If you need a quick and cozy meal, this Cabbage Soup will quickly become a favorite. especially if you want to shed some pounds away!

Cooking time: 15 to 30 minutes | Makes 6-8 servings.

Ingredients:

3 tablespoons olive oil

1/2 onion, chopped

2 cloves garlic, chopped

2 quarts water

4 teaspoons chicken bouillon

1 teaspoon salt, or to taste

1/2 teaspoon black pepper, or to taste

1/2 head cabbage, cored and coarsely chopped

1 (14.5 ounce) can Italian-style stewed tomatoes, drained and diced

How to make Super Easy Cabbage Soup:

Step 1. In a large stockpot, heat olive oil over medium heat. Stir in onion and garlic; cook until onion is transparent, about 5 minutes.

Step 2. Stir in water, bouillon, salt, and pepper. Bring to a boil, then stir in cabbage. Simmer until cabbage wilts, about 10 minutes.

Step 3. Stir in tomatoes. Return to a boil, then simmer 15 to 30 minutes, stirring often.

¼ C + 1 Tbsp. Butter unsalted

1 C. Onion diced

⅓ C. Celery chopped

¼ C. All-purpose flour

2 C. Milk

2 C. Chicken broth

2 C. Cooked and chopped broccoli florets

1 C. Matchstick carrots

2 C. Shredded sharp cheddar cheese

Salt and pepper to taste

How to make Panera Broccoli Cheddar Soup:

Step 1. Melt 1 tbsp butter in a saucepan over medium heat on the stove. Add the onions and celery and saute until beginning to soften. Remove and set aside.

Step 2. Add the ¼ cup of butter and ¼ cup of flour to the saucepan and stir to combine. Continue stirring and cook for 3 minutes.

Step 3. Whisk in the milk, chicken broth, and salt and pepper to taste. Simmer covered for 15 minutes

2 cups shredded rotisserie chicken

1 large yellow onion, diced finely

4 stalks celery, diced finely

1 cup baby carrots

2 red bell peppers, chopped

1 can of white potatoes, sliced

1 can diced roasted tomatoes

1/4 cup chopped fresh parsley

1 Tbsp. minced garlic

1 tbsp. salt

1 tsp. ground black pepper

8 oz. pasta

How to make Sicilian Chicken Soup:

Grandma’s Hamburger and Vegetable Soup

With all of the overindulging that comes with the holiday season, here’s one recipe that will warm you up without weighing you down.

This is by far the best vegetable soup I have ever eaten!

The rich and flavorful broth is enhanced by roasted vegetables and a full head of garlic.

Prep Time: 15 minutes

Cook Time: 1 hour – 1 hour 10 minutes

Servings: 6

Ingredients:

1 lb. Ground beef

1 Onion chopped

46 oz. Tomato juice

2 Potatoes diced

2 Carrots chopped

1 Can corn undrained

1 Can green beans undrained

Pinch of ginger

Salt and pepper to taste

How to make Grandma’s Hamburger and Vegetable Soup:

Step 1. Brown the ground beef in a large pot over medium-high heat.

Step 2. Drain any excess fat.

Step 3. Add the remaining ingredients to the pot, bring the mixture to a boil, reduce the heat to simmer, cover, and cook for 1 hour.
