Cracker Barrel Meatloaf

This meatloaf dish is very popular! You’ll love it! 

It’s my husband’s favorite! He loves meatloaf!

Ingredients for Cracker Barrel Meatloaf:

2 eggs, room temp

2/3 cup whole milk

25 Ritz crackers, crushed

1 large onion, diced

½ cup sharp cheddar cheese, shredded

1 tsp. salt

1/4 tsp. pepper

1 1/2 lbs ground beef

1/2 cup ketchup

1/2 cup brown sugar

1 tsp. mustard

How to make Cracker Barrel Meatloaf:

Step1: Preheat the oven to 350 degrees.

Step2: In a medium add your eggs and beat.

Step3: Add milk and crackers to the beaten eggs.

Step4: Add the onion and cheese to the egg mixture and stir to combine.

Step5: Add ground beef to the egg mixture.

Step6: Using your mix the meat and egg mixture until well combined.

Step7: Spray a 8×8 baking dish with nonstick cooking spray.

Step8: Mold the beef mixture into the baking dish.

Step9: Bake for 45 minutes or until the meatloaf is cooked thru.

Step10: In a small bowl add ketchup, brown sugar and mustard and mix to combine. \

Step11: Pour half of the topping over the meatloaf after 30 mins and spread evenly over the meatloaf.

Step12: Return the meatloaf to the oven for 15 mins.

Step13: Pour the rest of the topping over the meatloaf, spread it evenly.

Step14: Return the meatloaf to the oven and bake for 15 mins.

Catch a Husband Cake

If you like coconut you’ll definitely love this Catch a Husband Cake. This recipe is surprisingly easy to make, you just need to mix all the cake ingredients together and you’re good to go!

Now, this isn’t a traditional American cake or a typical light and fluffy cake. In fact, it doesn’t look like a real cake since it is not spongy. It looks more like a flan with more consistency.

Compared to a conventional cake, it is a very dense and moist cake, with a texture similar to a heavy cheesecake. This recipe may confuse you, so you just need to make sure to bake the cake until lightly browned on top and when a toothpick comes out clean. Even if it looks dry, the cake will still be very moist and creamy if you don’t over bake it.

You will notice that the flavor is unique, the light coconut flavor in the cake and the coconut flakes on the top make this cake delicious!

Ingredients for the cake:

1 can Condensed Milk
1 can Evaporated Milk
1 cup Coconut Milk
2 ½ cups Flour
1/2 cup Sugar
3 Eggs
3 tbsp Butter

Ingredients for the icing:

1 cup Coconut Milk
2 tbsp Sugar
1 cup Coconut (Shredded)

How to make tha cake:

Step 1: In a big blender, blend half of all ingredients for the cake.

Step 2: Put the blended mixture in a big bowl and then blend the other half of the ingredients.

Step 3: Put the other half of the blended mixture in the same bowl and mix together with a whisk.

Step 4: Add the blended mixture in a greased and floured Bundt pan.

Step 5: Bake at 350º F / 175º C for 45 minutes or until golden brown. Insert a toothpick in the cake, if it comes out clean remove the cake from the oven.

Step 6: Carefully remove the cake from the pan. Run a soft spatula around the edges of the cake, then invert a serving plate on top of the pan. In one quick motion, flip the cake upside-down.

How to make the icing:

Step 1: In a small-medium saucepan, put the coconut milk, sugar and grated coconut and stir.

Step 2: Bring to a boil and remove from the heat. Let it cool for 5 minutes and then pour over the cake.

Crab & Cream Cheese Snacks

Very simple and good recipe for family and friends gatherings!

We really love these! They’re HIGHLY ADDICTIVE!

Ingredients for Crab & Cream Cheese Snacks:

1-8 oz. tube crescent roll dough

3 oz. cream cheese, softened

1/4 cup mayonnaise

3/4 cup cooked crabmeat, chopped

2 green onions, chopped

1/8- 1/4 teaspoon cayenne pepper

Salt and pepper, to taste

How to make Crab & Cream Cheese Snacks:

Step1: Heat oven to 375°F. Spray cookie sheet with cooking spray. Unroll dough on work surface. Pinch seams to seal and roll with a rolling pin to create an even rectangle. Cut into 6 rows by 4 rows to make 24 squares.

Step2: In small bowl, mix cream cheese, mayo, crabmeat, onion, and red pepper. Salt and pepper to taste.

Step3: Divide crab mixture evenly among the squares, dropping it by spoonfulls that are 1/2 inch from 1 corner of each square.

Step4: Starting with same corner, fold dough over filling, and tuck end tightly underneath filling; continue rolling to within 1/2 inch of opposite corner. Roll opposite corner of dough over roll; press to seal.

Step5: Place on cookie sheet. Brush with egg white, if desired.

Step6: Bake 10 to 15 minutes or until golden brown. Remove from cookie sheet. Serve warm.
